Vegetable fritters with dips

Ready to serve vegetable fritters with dips

Serves: 2 vegetable fritters with dips

Ingredients: 

Fritters

  • ¼ cup plain wholemeal flour 
  • 1 red onion, peeled and finely sliced 
  • 1 tbsp olive oil 
  • 3 tbsp parsley and coriander, chopped 
  • 2 medium-sized eggs 
  • 2 large tomatoes, chopped 
  • 1 cup fine green beans, chopped 

Dips

  • 4 tbsp reduced fat natural yoghurt 
  • ¼ – ½ tsp Chinese five spice 

Or 

  • 4 tbsp reduced fat natural yoghurt 
  • ½ cucumber (100g or 2/3 cup) chopped 
  • ½ tsp mint sauce 

Method: 

  1. In a medium size bowl, mix together the onion, beans, parsley, and coriander, egg, tomato and flour. 

  2. Heat the oil in a medium-sized fry pan and place a large tablespoon of mixture into the pan. Depending on the size of the pan add another 2-3 spoons of mixture, spacing them well apart. 

  3. Cook for 2-3 minutes on each side until golden brown. 

  4. Serve the hot vegetable fritters with your choice of dips. 

  5. To make dips, blend all ingredients together until smooth.
