Turkey burgers with tomato salsa


Serves: 4 Turkey burgers with tomato salsa

Cooking time: 6 mins
Ingredients:
- 500g lean turkey mince or lean beef mince
- 1 onion, peeled and very finely chopped
- 1 large carrot, grated
- 1–2 cloves garlic, crushed
- 2 tbsp passata or crushed tomatoes
- 2 tbsp fresh coriander/parsley, chopped
- 1 heaped tbsp wholemeal flour
- 1 tbsp olive oil or vegetable oil
Salsa
- 4 spring onions, finely chopped
- 2 medium-sized tomatoes, chopped
- 2 tbsp coriander/parsley, chopped
- Juice 1/2 lemon
- 1 green chilli, finely chopped (optional)
Method:
- To make the salsa: combine all the ingredients in a small bowl and cover. Leave to stand while cooking the burgers to allow the flavours to develop.
- To make burgers: place onion, garlic, carrots, mince, passata and herbs in a large bowl and mix together – or place ingredients in a food processor and process briefly until combined.
- Shape the mixture into 8 x 8cm rounds, 2cm deep. Coat each burger lightly in flour.
- Heat the oil in a fry pan and cook burgers over medium heat for 3 minutes per side until golden brown and cooked through.
- Serve the burgers with salsa and a watercress, spinach and rocket salad.
