Tuna/salmon potato patties
Serves: 4 tuna/salmon potato patties

Ingredients:
- 500g (2-3 medium) potatoes (or sweet potato)
- ½ cup reduced fat milk
- 425g can tinned tuna or salmon in spring water
- 1 spring onion
- ½ cup wholemeal breadcrumbs
- 1 egg
- 2 tbsp of chopped coriander or parsley
- 1 tsp olive oil
Method:
- Peel potatoes, chop into small chunks and boil until soft. When cooled, add milk and mash.
- Drain tuna or salmon and mix with potatoes, chopped spring onion, herbs, egg and breadcrumbs.
- Mix well until all ingredients combined, then shape mixture into approximately 30 patties.
- Heat oil in pan and cook each pattie until golden on both sides.
- Drain off excess oil on paper towel.

- This recipe makes 30 tuna/salmon potato patties, you freeze the leftovers for a quick meal for another time.
