Pizza Scrolls
Serves: 12 pizza scrolls

Ingredients:
Olive oil spray
3 cups wholemeal self-raising flour
2 cups reduced fat natural yoghurt
¼ cup no added salt tomato paste
1 cup baby spinach, chopped
½ cup basil leaves, chopped
½ red capsicum, diced
½ cup reduced fat mozzarella, grated
Method:
- Pre-heat oven to 180°C. Then, spray a round baking dish with olive oil and line with baking paper.
- Mix the wholemeal self raising flour and yoghurt in a bowl. Sprinkle flour onto a bench or chopping board and knead mixture for a few minutes. Add more yoghurt if the mix is too dry or extra flour if too wet.
- Using a rolling pin, roll out the dough into a rectangle about 0.5cm thick. Cover the dough with a light spread of tomato paste and sprinkle with the spinach, basil leaves, capsicum and mozzarella.
- Roll the dough, from the long side, into a log. Cut into 4cm pieces and place in the baking tin. Push the pieces against each other to help them retain their shape. Bake for 20 minutes or until golden.
- Allow to cool slightly before serving your pizza scrolls.
