Chicken Satay

Chicken satay skewers in white plate

Serves: 6 chicken satay

Prep time: 10 mins (plus 2hr marinating time)

Cooking time: 20 mins

Ingredients: 

  • 4 medium chicken breast fillets 
  • 2 tbsp lemon juice 
  • 2 tbsp soy sauce (reduced salt) 
  • 1 clove crushed garlic 
  • 1 tsp crushed ginger 
  • To serve: 1½ cups cooked brown rice 
  • To serve: green vegetables (e.g. broccoli, carrots, cauliflower, baby corn) 

Satay Sauce 

  • 1 tsp coconut essence 
  • ¼ cup crunchy natural peanut butter (100% peanuts) 
  • 2 tsp soy sauce (reduced salt) 
  • 1 tbsp sweet chilli sauce 

Method: 

  1. Cut chicken into 2cm wide strips and place in a bowl. Prepare marinade mix by mixing lemon juice, garlic, ginger and soy sauce and pour over the chicken. Allow to sit for at least 2 hours. 
  2. Soak 24 skewers in cold water for half hour. 
  3. Combine satay ingredients in a bowl and mix well using a whisk. 
  4. Pre heat grill pan to a moderate heat. Thread chicken strips onto each skewer carefully. 
  5. Place skewers onto hot pan, cook until browned then rotate to cook other side. Cook for around 10 minutes or until cooked through. Repeat with remaining skewers. 
  6. Serve skewers with 1/2 cup cooked rice per person and vegetables of your choice. Drizzle satay sauce over the chicken skewers.
