Chicken Afritada (Filipino chicken stew)

Serves: 4 Chicken Afritada (Filipino chicken stew)

Cooking time: 30 minutes

Ingredients: 

  • 1 kg skin-free chicken breast, diced
  • 4-5 potatoes, peeled and halved
  • 1 red onion, diced
  • 2 cloves garlic, minced (add more if desired)
  • 1 green pepper, sliced into strips
  • 1 red pepper, cut into strips
  • 2 cups chicken stock (preferably low salt variety)
  • 1 can of tomato puree
  • 2 tbs fish sauce (preferably low salt variety if available)
  • 1 tbs Friendly oil (e.g. olive or canola oil)

Method: 

  1. In a wok, heat oil. Saute onions and garlic until brown.
  2.  Add chicken and slightly brown.
  3. Pour the tomato sauce and stock. Bring to the boil and allow to simmer for 20 mins or until the chicken is almost cooked.
  4. Add potatoes and continue to cook for 10 mins or until the potatoes are cooked.
  5. Add the green and red peppers, simmer for an additional minute or two.
  6. Serve the Chicken Afritada (Filipino chicken stew) hot with steamed rice (preferably brown).
