Baked veggie chips
Serves: 6 Baked veggie chips
Prep time: 10 mins
Cooking time: 20 mins
Ingredients:
1 beetroot
1 sweet potato
¼ pumpkin
1 carrot
1 parsnip
Herbs (e.g. fresh or dried rosemary or thyme)
Olive oil spray
Pepper to taste
Method:
1. Preheat oven to 160°C.
2. Peel all vegetables and cut into thin slices (you can use a mandolin if you have one). Don’t worry if they are irregular shapes and sizes.
3. Line a baking tray with baking paper and lightly spray with olive oil.
4. Spread sliced vegetables and on tray and lightly spray with olive oil. Sprinkle herbs and pepper to taste.
5. Bake for 20 minutes or until crispy. Enjoy your Baked veggie chips!
